Wholesome ingredients plus let’s not forget that seafood is considered a healthier choice than poultry and meat. Give your family a break from the heavy eating and have something light. Salmon Florentine With Cream

Kitchen Tools

Ingredients

  • 4 (6-8 oz) salmon fillet
  • 5 cups of fresh spinach chopped
  • 2 cups mushrooms slice
  • 1/4 cup white wine
  • 1/2 diced onion
  • 2 tbsp of olive oil
  • 3 large garlic cloves minced
  • 3/4 cup heavy whipping cream
  • 2 tbsp Old bay seasoning
  • 1 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Season salmon with 1 tbsp old bay and pepper.
  2. Heat cast iron skillet with 2 tbsp of olive oil.
  3. Add 2 pieces of salmon to skillet and cook on each side for 3-4 minutes.
  4. Remove from pan add 2 other pieces and cook the same. Add more olive oil if needed. Salmon is done when it flakes easily with a fork.
  5. Remove salmon and set to the side on a baking sheet and place in the oven at 200 degrees or warm.
  6. Using the same skillet you cooked the salmon in add mushrooms and spinach. Cover skillet with lid and let the spinach cook down, stirring occasionally.
  7. Once spinach is cooked down, drain off the liquid that was produced from mushrooms and spinach.
  8. Return to the stove and add white wine. Simmer for 2 minutes to cook down the alcohol.
  9. Add heavy whipping cream and mix well. Season with remaining tbsp of old bay ,red pepper flakes. Stir and cook for 3-4 minutes.
  10. Pour spinach and mushroom mixture over the cooked salmon.
  11. Eat by itself or serve with mash potatoes or whipped cauliflower
