How to Make Brown Stew Fish

Jamaican Brown Stew Fish 🇯🇲

Equipment

Ingredients
  

  • 2-4 Whole Firm white fish (such as red snapper or grouper)
  • 5 tbsp Complete seasoning
  • 3 tbsp Adobo all-purpose 
  • 1 tsp Salt (To Taste)
  • 5 tbsp Black pepper
  • 3 tbsp Paprika
  • 1 tbsp Red pepper flakes 

Flavor Oil  

  • ¼ Cup Vegetable oil
  • 3 Cloves Garlic Crushed
  • 7 Pimento berries 
  • 1 Scotch bonnet pepper
  • 3 Stalks Fresh thyme

Brown Stew Sauce Ingredients  

  • 1 Onion Sliced
  • 3 Bell peppers (one green, yellow, and one red) Sliced
  • 3 Cloves Garlic Minced
  • 2 Tomatoes Chopped
  • 3 tbsp Mushroom sauce
  • ¼ Cup Ketchup
  • Fresh thyme
  • 2 Scallions Chopped
  • Salt and Pepper (To Taste)
  • ¼ Cup Sugar (Any Sugar)
  • Scotch bonnet pepper 

Instructions
 

Prepare the Fish

  • Place fish in a bowl of cold water, vinegar, and 1 squeezed lime.
  • Rinse the fish fillets under cold water and pat them dry with a paper towel.
  • In a shallow dish, combine the seasons, salt, black pepper, and paprika, complete and adobo. (leave 2 tbsp back) 
  • Make a slit on both sides of each fish. Cut the slits as an X to make sure the fish doesn't break. (see video)  
  • Season the fish, making sure to coat both inside the fish and in the slit cuts on the fish.

Fry the Fish

  • In a large skillet, heat the vegetable oil over medium-high heat.
  • Add thyme, scotch bonnet, pimento berries, and garlic to flavor the oil.
  • Once the oil is hot, carefully place the fish into the skillet, ensuring they don't overcrowd.
  • Fry the fish for about 4-5 minutes on each side until they turn golden brown.
  • Remove the fish from the skillet and set them aside on a paper towel-lined plate to drain excess oil.

Prepare the Brown Stew Sauce

  • In the same skillet (or off some oil), add the sliced onions and bell peppers. Sauté them until they become tender and lightly caramelized. 
  • Add the minced garlic, scallion, fresh thyme, and scotch bonnet and cook for an additional minute. 
  • Place 5 cups of water, ketchup, mushroom sauce, and sugar, and bring the mixture to a simmer.

Simmer and Serve

  • Carefully place the fried fish fillets back into the skillet, ensuring they are submerged in the sauce.
  • Reduce the heat to low, cover the skillet, and let the fish simmer in the sauce for about 10-15 minutes, or until the fish is cooked through and flaky.
  • Adjust the seasoning with salt and pepper according to your taste.
  • Serve the Jamaican Brown Stew Fish hot with steamed rice or your favorite side dish.
