Prepare the Fish
Place fish in a bowl of cold water, vinegar, and 1 squeezed lime.
Rinse the fish fillets under cold water and pat them dry with a paper towel.
In a shallow dish, combine the seasons, salt, black pepper, and paprika, complete and adobo. (leave 2 tbsp back)
Make a slit on both sides of each fish. Cut the slits as an X to make sure the fish doesn't break. (see video)
Season the fish, making sure to coat both inside the fish and in the slit cuts on the fish.
Fry the Fish
In a large skillet, heat the vegetable oil over medium-high heat.
Add thyme, scotch bonnet, pimento berries, and garlic to flavor the oil.
Once the oil is hot, carefully place the fish into the skillet, ensuring they don't overcrowd.
Fry the fish for about 4-5 minutes on each side until they turn golden brown.
Remove the fish from the skillet and set them aside on a paper towel-lined plate to drain excess oil.
Prepare the Brown Stew Sauce
In the same skillet (or off some oil), add the sliced onions and bell peppers. Sauté them until they become tender and lightly caramelized.
Add the minced garlic, scallion, fresh thyme, and scotch bonnet and cook for an additional minute.
Place 5 cups of water, ketchup, mushroom sauce, and sugar, and bring the mixture to a simmer.
Simmer and Serve
Carefully place the fried fish fillets back into the skillet, ensuring they are submerged in the sauce.
Reduce the heat to low, cover the skillet, and let the fish simmer in the sauce for about 10-15 minutes, or until the fish is cooked through and flaky.
Adjust the seasoning with salt and pepper according to your taste.
Serve the Jamaican Brown Stew Fish hot with steamed rice or your favorite side dish.
