Caribbean Style Char Siu ??

Marinade
- 1 tbsp Hoisin Sauce
- ½ tbsp Chinese Five Spice
- 1 tbsp Brown Sugar
- 1 tbsp Preferred Homemade Mixed Spice
- 1 tbsp Jerk Paste
- 1½ tbsp Dark Soy Sauce
- 1 tbsp Vegetable Oil
- 1 tsp Red Food Coloring
Basting Marinade
- Leftover Marinade
- 1 tbsp Honey
- 1 tbsp Oil
- ½ tbsp Jerk Seasoning
Preparation
Mix all the ingredients for the marinade in a bowl and save ⅓ for use later.
Place the pork in Ziplock bag and pour the marinade on it. Make sure to mix it well in the bag and allow it to marinate for at least 24hrs in the fridge.
When you’re done marinating, preheat oven to 180C.
Line a tray with foil and place a rack on top. Remove pork and place them gently on the rack.
Add a bit of water to the tray to avoid burning and roast for 25 minutes.
Remember the ⅓ marinade saved earlier, add 1tbsp jerk spice, 1 tbsp honey & 1 tbsp oil, mix and set aside.
Check pork after 25 mins, remove and baste with the new marinade on both sides.
Place it back in the oven and roast for additional 15 minutes until sticky to touch.
Remove from the oven and allow it to rest for about 5-10 minutes before slicing
Serve as desired and enjoy.
Tips
- You can use whole pork shoulders and slice to your preferred thickness.
- Feel free to throw in other spices you enjoy
- Cooking time may vary depending as oven temperatures are not the same
