Wash the chicken in water with the lemon juice and drain any excess water from the chicken. Pat dry with a kitchen towel if necessary.
Add 2 tbsp each of curry, jerk seasoning & adobo seasoning mix and rub well on the chicken pieces.
Add in your peppers, onion & carrots as well as some thyme & rosemary and mix to incorporate everything.
Allow it to marinate for 2 hours or more if you have time or at least 1hr
After marinating, heat the oil in a pan, add in the curry powder and start the browning process.
After browning, add in the chopped onions and garlic and sauté for about 5 minutes or until they soften.
Add in the marinated chicken and sauté until the chicken is golden on all sides.
Add the potatoes, chia ½ can coconut milk and stir in the seasonings.
Bring it to a boil for 15 minutes and then lower the heat and let it simmer for another 15 minutes.
Allow to cool and serve with your rice & peas.
