Easy Curry Chicken Recipe

Ingredients
  

  • 2 Ibs Chicken
  • 1 Lemon
  • 1 tbsp Jerk Seasoning
  • 1 tbsp Adobo Seasoning
  • 2 tbsp Curry Powder
  • 1 tsp All Purpose Seasoning
  • 1 tsp Salt
  • ½ Bell Pepper
  • 1 Medium Onion Chopped
  • 1 Medium Carrot Diced
  • 1 Small Potato Diced
  • 2 Sprig Fresh Thyme
  • Fresh Rosemary
  • Ginger
  • 2 Cloves Garlic
  • 1 Scotch Bonnet
  • 5 Pimento Seeds
  • Scallions
  • 4 tbsp Cooking Oil
  • 1 Can Coconut Milk

Instructions
 

  • Wash the chicken in water with the lemon juice and drain any excess water from the chicken. Pat dry with a kitchen towel if necessary.
  • Add 2 tbsp each of curry, jerk seasoning & adobo seasoning mix and rub well on the chicken pieces.
  • Add in your peppers, onion & carrots as well as some thyme & rosemary and mix to incorporate everything.
  • Allow it to marinate for 2 hours or more if you have time or at least 1hr
  • After marinating, heat the oil in a pan, add in the curry powder and start the browning process.
  • After browning, add in the chopped onions and garlic and sauté for about 5 minutes or until they soften.
  • Add in the marinated chicken and sauté until the chicken is golden on all sides.
  • Add the potatoes, chia ½ can coconut milk and stir in the seasonings.
  • Bring it to a boil for 15 minutes and then lower the heat and let it simmer for another 15 minutes.
  • Allow to cool and serve with your rice & peas.
