Instructions
Marinating
Chop 1/2 onion, 4 scallion, 6 garlic cloves, thyme, and set aside.
In a small bowl, combine salt, pepper, allspice, paprika, coriander, onion, and
garlic powder.
In a bowl, pat dry chuck roast and generously season the roast. (3/4 of the
seasoning mix)
Combine the remaining seasoning mix with the chopped aromatics and stuff the
roast.
Cover with cling wrap and let marinate overnight in the refrigerator for best
results.
Time to Cook
Remove your roast from refrigerator and allow to come room temperature.
Preheat oven to 375.
Chop remaining fresh aromatics and set aside.
To an oven-safe pot, add oil and sear the roast on the sides. (1-2 mins per side)
Transfer the roast back to the bowl and set aside.
To that same pot, add chopped aromatics (and oil if needed) and saute for 1-2
minutes before adding the stock.
Allow to the stock to come to a boil before adding the roast to the pot.
Cover and bake at 375 for 3 hours or until tender. You can rotate your roast every
30-45 minutes.
Gravy
Remove roast and let it rest.
Skim the excess oil from the roast dripping.
Taste and adjust if necessary.
Allow the mixture to come to a simmer.
Add water if needed and a cornstarch mix and simmer for a minute.
Sliced roast and serve with your favorite sides.

For an easy stock, you can dissolve 12g of beef or chicken bouillon cube in 2 cups of hot water.
