Tashianna recently moved from New Jersey to Nottingham, UK with her husband and she experienced a culture shock upon living in England 🏴󠁧󠁢󠁥󠁮󠁧󠁿. Her biggest struggle upon adjusting was embracing the food. The fish 🐟 and chips 🍟 were nice upon arrival, but she wanted something wholesome that would pack a nice punch in her stomach like the Caribbean recipes she has grown up with. Tashi searched for English recipes and stumbled upon roast beef. She recalled this was her husband’s favorite and she wanted to cook for him. Although, she is not familiar with the recipe, she searched, “how to make roast beef”?

Fortunately, for Tashi KaribeTV had a video on making Caribbean style roast beef. At first glance she felt that the recipe may be too much as she currently live with her husband. Using her foodie skills, she assured herself that the leftovers can be used to make a roast beef sandwich. What made this recipe special is that it showed how to make it in the oven. The weather in England can be fickle throughout the day, so Karibe’s recipe was a must try.  

Caribbean Style Roast Beef

This recipe is more involved as, its seasonings consist of traditional Caribbean ingredients, such as garlic, allspice, browning, and thyme. Tashi was eager to try Karibe’s recipe, because compared to the other food she has been eating in England, everything tasted a little bland. She now understood the Karibbean way of cooking Caribbean style roast beef. 

Roast Beef in The Oven 

Tashi immediately turns on her oven and prints out Karibe’s roast beef recipe while loading up Caribbean Style Roast Beef. Normally foodies follow the printed instructions or watch the recipe in action. Let’s just assume she wanted to perfect this recipe. 😊 As she seasoned her beef and placed it in the oven, a smile came to her face. Her kitchen simulated the smell that she was used to when her mother would cook.

As she followed through with completing her meal, she promised herself that she would experiment with other English recipes with a touch of Karibbean style of cooking. She started to appreciate her new home more and now was considering herself to be a proper English woman.  

Roast Beef Recipe

Caribbean Style Roast Beef Recipe 🇬🇧

Ingredients
  

  • 3 Ib Chuck Roast
  • 1 Large Onion
  • 8 Spring Green Onion
  • Thyme (Use Your Discretion)
  • 8 Cloves Garlic
  • tsp Sea Salt
  • 1 tsp Ground Allspice
  • 1 tsp Paprika
  • ½ tsp Black Pepper
  • ½ tsp Coriander
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder
  • ½ tsp Browning
  • 1-2 tbsp Oil
  • 1-2 Cups Chicken or Beef Stock

Instructions
 

Marinating

  • Chop 1/2 onion, 4 scallion, 6 garlic cloves, thyme, and set aside.
  • In a small bowl, combine salt, pepper, allspice, paprika, coriander, onion, and
    garlic powder.
  • In a bowl, pat dry chuck roast and generously season the roast. (3/4 of the
    seasoning mix)
  • Combine the remaining seasoning mix with the chopped aromatics and stuff the
    roast.
  • Cover with cling wrap and let marinate overnight in the refrigerator for best
    results.

Time to Cook

  • Remove your roast from refrigerator and allow to come room temperature.
  • Preheat oven to 375.
  • Chop remaining fresh aromatics and set aside.
  • To an oven-safe pot, add oil and sear the roast on the sides. (1-2 mins per side)
  • Transfer the roast back to the bowl and set aside.
  • To that same pot, add chopped aromatics (and oil if needed) and saute for 1-2
    minutes before adding the stock.
  • Allow to the stock to come to a boil before adding the roast to the pot.
  • Cover and bake at 375 for 3 hours or until tender. You can rotate your roast every
    30-45 minutes.

Gravy

  • Remove roast and let it rest.
  • Skim the excess oil from the roast dripping.
  • Taste and adjust if necessary.
  • Allow the mixture to come to a simmer.
  • Add water if needed and a cornstarch mix and simmer for a minute.
  • Sliced roast and serve with your favorite sides.

  • For an easy stock, you can dissolve 12g of beef or chicken bouillon cube in 2 cups of hot water.
