Fabien is a beautiful woman from Port- au- Prince Haiti 🇭🇹 who recently moved to Paris and was beginning to feel home sick. Although she is happy to be living in France and grateful for the opportunities afforded to her, she was not satisfied with the French cuisine. She enjoyed the meals but was missing the connection to Haiti. While living in France, she started to form solid friendships and asked what she should do to solve her dilemma? Her friends who also migrated to France recommended that she should blend cultures and directed Fabien to KaribeTV. Upon her search she found many recipes highlighting African and Caribbean culture, but Caribbean style fricassee chicken stood out for her. The origin of fricassee chicken grabbed her attention because it is a popular dish in France 🇫🇷.
Fabien became excited because this recipe was a fusion between French and Caribbean cuisine. In her eyes she viewed the recipe as Caribbean fricassee chicken. As she reviewed the recipe, she realized that it is a hearty French stew chicken recipe. Fabien immediately had flashbacks in Haiti eating Bouyon Bef. With her new discovery of Karibe, her connection to Haitian cuisine while living in France was salvaged. Fabien grabbed her cookware and dived deeper into the recipe to learn how to make chicken fricassee.
How To Make Chicken Fricassee
While reviewing her newfound French stew chicken, she was amazed with the ingredients. Garlic, scotch bonnet pepper and oddly enough a touch of sugar. With so much excitement, Fabien added her Caribbean fricassee chicken to her YouTube playlist and watched with so much intent to make certain she did not miss any steps. Fabien is a perfectionist and would have been disappointed if she was not able to recreate this recipe. As she became confident of the recipe, she was curious about the history of fricassee chicken and wanted to know if there was any connection to the Caribbean.
Origin of Fricassee Chicken
Fabien researched the history of fricassee chicken and found that it is a popular recipe in France. The recipe dates to medieval times found in the French cookbook Le Viandier circa 1300. As she continued her search, she learned a fun fact that fricassee is a stew made with meat browned in butter and then served in a sauce with the related cooking stock. Being satisfied with her history lesson, Fabien began cooking.

As Fabien completed her French stew chicken she was pleased with the outcome. She laid her chicken over Haitian black rice 🇭🇹 and enjoyed her meal. Thanks to Karibe, France was beginning to feel like home.

Caribbean Style Fricassee Chicken 🇫🇷

Ingredients
- Chicken Wings
- 1 Lemon To clean chicken
- ¼ cup White vinegar
- 5 tbsp Complete seasoning 2 tbsp to season water
- 2 tbsp Green seasoning
- 5 tbsp Adobo 2 tbsp to season water
- 3 tbsp Garlic powder
- 3 tbsp Paprika
- 1 tbsp Onion powder
- 8 tbsp Mushroom sauce
- 6 Pimento berries Crushed
- ¼ cup Oil
- 1 Onion
- 3 Garlic cloves
- 1 Green bell pepper
- 3 Scallions Chopped
- ½ cup Ketchup or more if needed
- ¼ cup Sugar to taste
- 1 tsp Thyme
- 1 tsp Black pepper
- 1 Scotch bonnet pepper
- 1 Large Irish potato
- Salt to taste
Instructions
- Wash and season the wings with dry seasonings listed above then Marinade overnight or at least 1 hour.
- Heat a deep pot on medium-high heat, add oil, when hot, add chicken wings and brown on each side.
- Remove pieces from the pot as they brown. Remove some of the oil to sauté the aromatics.
- Add the onion, garlic, and sweet pepper, scallions, thyme, crushed pimento berries, scotch bonnet pepper, to the skillet. Cook for 5-7 minutes or until the vegetables are fragrant and translucent.
- In the bowl you seasoned the chicken, add about 3-4 cups of water and mix it around to get off excess seasoning in the bowl or you can use chicken broth.
- Pour it in the pot and add 3 tbsp of mushroom sauce, sugar, ketchup, and season with black pepper, salt, and complete seasoning. Stir to combine.
- Place the chicken in the pot. Bring the mixture to a boil.
- Reduce the heat to low and let the mixture simmer for 35-40 minutes or until the chicken is cooked through and the sauce has thickened. (At the 25-minute mark add your potatoes)
