It’s a beautiful sunny day in Guyana 🇬🇾 and Jonnelle is craving her favorite meal, curry lamb chops! Her parents would call it curry mutton, but she could care less. All she is thinking about is soft and tender lamb filling her stomach. Jonelle is a young woman at the age of 18, who grew up in a privileged lifestyle. In other words, being an only child tends to have its advantages and disadvantages. 😊 As Jonelle heads to the kitchen, she finds a letter from her parents that states that they took a weekend trip, and she has the home to herself. A smile hits her face like a kid at Disney World, but her stomach starts to growl. The issue is that growing up as a privileged only child, Jonelle never actually learned how to cook. History of Curry Mutton 

Consequently, with the inability to cook, Jonelle was destined to have curry lamb chops for dinner. You may think it would be wise to order take out, but this is a specialty dish, and you can’t simply order at a restaurant. Curry mutton is a popular recipe in India, as India is known as the home for curry recipes, and combined with our African roots, create a tasty curry lamb chop recipe. There are large amounts of curry spices and cooking methods, but Jonnelle wanted the curry mutton she watched on KaribeTV. 🔥 

Best Indian Lamb Dish 

Although many would say this is one of the best Indian lamb recipes, it takes a certain kind of foodie to pull this recipe off. To clarify, curry mutton ingredients such as garlic, curry powder, pepper, ginger mixed with coconut milk takes a someone very bold to even create this recipe. Although Jonelle was not the best cook, she was up for the challenge because this is her favorite dish.  

Easy Curry Lamb Chops 

As a true West Indian, she printed out her curry mutton ingredients and started cooking with great tenacity. She began slicing up her favorite lamb pieces. Then added all the necessary seasonings. Started the fire under some of her pots from Karibe, and the rest was history. Once Jonelle began eating, she felt accomplished and inspired to start cooking more for herself.

Curry Lamb Chops Recipe

Equipment

  • Karibe Utensil Set
  • Karibe Knives Set

Ingredients
  

Rack of Lamb

  • ¼ Cup Curry Powder
  • ¼ Cup Black Pepper
  • ¼ Cup Complete Seasoning
  • 1 tbsp Salt (to taste)
  • 1 tbsp All Spice
  • 1 tsp Ground Ginger
  • 1 tsp Ground Cumin
  • 2 Cloves Garlic
  • 5 Pimento Berries

Curry Sauce

  • 1 Can Coconut Milk
  • ¼ Cup Raw Onion (finely chopped)
  • Cup Sweet Pepper (finely chopped)
  • 1 Scotch Bonnet Pepper
  • 1 tbsp Raw Ginger (finely chopped)
  • ¼ Cup Granulated Sugar
  • 1 tbsp Red Pepper Flakes
  • 1 tsp Cornstarch

Instructions
 

  • Slice up the rack of lamb chops pieces
  • Soak lamb in 1/4 cup of lime juice, water, and vinegar
  • Rinse lamb and pat it dry
  • Make season blend (save about 5 tbsp for sauce)
  • Drizzle olive oil on the lamb and season on both sides (marinate overnight)
  • Add oil to a pot, when the oil is hot toast 1 tbsp curry powder, garlic, 1/2 scotch bonnet, and pimento berries.
  • Sear lamb on both sides.
  • Set the lamb aside and throw away the oil.
  • Make sauce
  • Add in the lamb and let it boil until tender. Serve with your favorite side.

Sauce Instructions

  • To the pot add 1 tbsp of oil
  • Then add onion, sweet pepper, ginger, 1/2 scotch bonnet pepper and cook until fragrant
  • Add in Coconut Milk and the rest of the season blend, corn starch, pepper flakes, and sugar (add more salt to taste optional)
  • Let the sauce simmer on medium-low heat to thicken for 5 minutes.
