It is a bright and sunny day and Nashay is feeling adventurous. Nashay is beautiful woman from Kingston, Jamaica, known in town as a top cook. After all, her Jerk chicken and lamb chops are to die for and what has gained her notoriety in town. The only issue is that she is not the best baker. Last year she tried making rum cake and it led to criticism that sparked unknown insecurities about her cooking abilities.
As she started her day, she made a promise to herself that today would be different and that she would improve as a baker. Nevertheless, Nashay jumps online and searches for Jamaican sweet bread recipes and stumbles upon KaribeTV. After reviewing the recipes, she found a Jamaican Coco Bread recipe.
Jamaican Sweet Bread
A smile came to her face, because she found her sweet bread recipe and was eager to improve her baking skills. Even though she found a Jamaican sweet bread recipe, it is the same as Jamaican coco bread. 😊 Nashay dives into the ingredients and instructions. Jamaican sweet bread is a great appetizer, which make sense on why it is popular throughout the Caribbean. As Nashay grabs her kitchen tools, she asks herself what can I eat with coco bread? There must be something great that will compliment this starchy and sweet treat? What is this coco bread sandwich everyone talks about?
What Can I Eat with Coco Bread?
Obviously, she immediately grabs her smartphone and finds that coco bread can be eaten with 🇯🇲 Jamaican patties, 🇳🇬 Nigerian meat pies and empanadas. As a result of her research, she understood why others would make a coco bread sandwich. Not ending her search there, she was curious on why is it called coco bread?
Why Is It Called Coco Bread?
In fact, the “Coco” is short for coconut milk. Not surprised by this fact, because the sweetness of coconut milk makes these breads special. Finally, completing her research, Nashay heads back to the kitchen to complete her tasty bread. She turns off her oven and lets her bread cool for a few minutes. Excited by the outcome, she was eager to bake more and try more baking recipes.

Equipment
- Utensil Set
- Knives Set
Ingredients
- 3 Cups Bread Flour
- ¼ tbsp Baking Powder
- 3½ tbsp Sugar
- 2 tsp Yeast
- 1 Cup Coconut Milk
- 1 Egg
- 4 tbsp Salted Butter
Instructions
- Activate the yeast (if not instant) by mixing ½Tbsp sugar with the yeast in warm water and set aside to proof.
- In your mixer, add all the dry ingredients (flour, sugar & baking powder) and mix well to combine.
- Then add the wet ingredients (coconut milk, egg & activated yeast).
- Mix on low speed for about 3-5 minutes to incorporate all the ingredients.
- Pause and add in butter then mix on low for another 3-6 minutes. Increase the speed and knead for an additional 5 minutes until a smooth dough ball forms.
- Scrape all the dough from the sides of the mixing bowl and transfer the dough into a lightly greased bowl.
- Cover and leave to rise until it doubles in size.
- Once doubled, transfer dough to a lightly floured surface and knead for 30 seconds to release some of the air.
- Cut into 6-10 equal pieces and mold each piece into a ball.
- Using a rolling pin, roll each ball in a round shape according to your desired thickness, brush the surface with melted butter and fold in halves.
- Transfer each piece onto your prepared baking sheet and let the second rise begin for another 30-45 minutes.
- After the second rise, brush with more butter (this is optional) and bake in your pre heated oven for 15-20 minutes at 180•C.
- Once baked through, remove from the oven and allow to cool.

Notes
- Keep the dough soft for a fluffier, more
desirable texture. - Roll the dough to your desired thickness!
There’s no rule for this. - For a richer flavor, brush them with melted
butter when they come out of the oven. - Be sure to check on your bread as
temperatures of ovens vary!
