Carla is popular chef in Mexico City 🇲🇽, second to none besides her mother. Growing up, this is a challenge for her because her mother is versatile and skillful in the kitchen when creating all types of meals. Whether it’s the passed down skillet from her grandmother or her reliable utensils that make every meal come out right. Carla was looking to crown herself in the family as the best cook and defeat the consistent reminder that she can’t cook better than her mother. Destined to improve her cooking skills she immediately grabbed her recipe book. Carla viewed her family favorites and found an authentic Mexican quesadilla recipe. Destined to make the best chicken quesadilla recipe, she had to figure out a way to spice it up.
Mexican Quesadilla Recipe 🇲🇽
Carla stunned because quesadillas are one of her favorite recipes to make. She has received numerous awards in cook off competitions for her Mexican Quesadilla Recipe. Most recently her award on the “Best Chicken Quesadilla” in the “Which Gender Can Cook Better” competition. Carla did a quick search for recipes that combined cultures, and she found KaribeTV. She was aware of Karibe due to her interest on African and Caribbean culture. After a thorough review, Carla is interested in the Jamaican chicken recipe. 🇯🇲 The seasoning and spices are a must have for every foodie and would be a great introduction for her in creating recipes in other cultures.
Jamaican Style Quesadilla 🇯🇲
With blending of Jamaica’s culture, Carla official named this recipe Jamaican style quesadilla and immediately added it to her recipe book. Carla immediately grabbed her kitchen tools and began creating her Caribbean quesadillas as she nicknamed it. Carla felt a sense of satisfaction as she knew this would be a great introduction to create more specialty dishes outside of her Mexican heritage. With a curious mind, she began looking into other recipes from Karibe and is impress with pepper shrimp and pepper steak. As you read this, Carla is looking into ways to recreate these recipes with a Mexican twist. 😂
The Best Chicken Quesadilla
After Carla finished cooking her Caribbean quesadillas, she proclaimed her recipe to be the best chicken quesadilla she ever had. With so much excitement Carla can’t wait to share the combination of Mexican and Jamaican cuisine. Before sharing it with the world, she immediately went to her biggest competitor, which is her mother. She disguised the quesadillas as a dish from a popular restaurant to make certain her mom wasn’t biased. As mom ate them, she stated that these were the best chicken quesadillas she ever had. Carla cut her off and informed her that she made them. Both laughed as mom recognized that the torch as the best cook in the family had been passed down to Carla.

Jerk Chicken Quesadillas Recipe 🇲🇽
Equipment
- Karibe Utensils Set
- Karibe 10" Cast Iron Skillet
- Karibe Cutting Board
Ingredients
- 1 Pack Tortilla Wraps
- 4 Pieces Chicken Breast
- ½ – 1 Cup Mexican four cheese or cheese of your choice
- 1 tbsp Mild or spicy jerk seasoning
- ½ Cup Sweet corn
- ½ Cup Red onion
- ½ Cup Bell pepper
- ½ – 1 tsp Parsley flakes
- ½ tsp Black pepper
- 1 ½ tsp Maggi all purpose seasoning
- 1 – 2 Pinches Salt
- Oil
Instructions
- Dice into medium size onions and bell peppers, set aside.
- Measure and set aside sweet corn and cheese of your choice.
- Clean and season the chicken breast.
- Set aside for at least 30 minutes before cooking.
- Add oil to your cast iron skillet and allow it to get hot, then add your chicken breast. Cook for 4-5 minutes on each side. (depending on the thickness)
- Remove the chicken breast from the pan once fully cooked, set aside for 5 minutes then cut into chunks.
- Add your tortilla to the skillet and allow to heat up (5-10 seconds), add your fillings to half of the tortilla wrap and fold in half.
- After a minute or until the cheese is melted, flip your wrap onto the other side and allow the cheese to melt. Remove from the skillet once the cheese is melted.
- Continue this process until you have your desired number of quesadillas.
- Cut, serve and enjoy!
