This Chow Mein can be prepared with chicken or if you are on a health tip, the vegetable Chow Mein would be a suitable option. No need to worry about feeling hungry if you choose the vegetable option. The noodles help in the stomach department.

Honestly Guyanese Chow Mein is so versatile that you can whip it up with your meat of choice. Beef Chow Mein, Chicken Chow Mein, Vegetable Chow Mein, the choice is yours! 😊 One recipe with multiple options is a blessing. Please do not confuse this with Lo Mein. Guyanese Chow Mein and Lo Mein 

Before you dive in, let’s make sure that we understand the difference between Guyanese Chow Mein and Lo Mein. It is actually quite easy and simple and it all starts with the noodles. For Chow Mein, the noodles are soaked in hot water. The hot water softens the noodles and once soften, you can begin to stir fry your noodles with your ingredients. Lo Mein noodles on the other hand are completely cooked. Once the noodles are cooked, then they are stirred in your ingredients. To help you remember, Chow Mein is stir- fried noodles whereas Lo Mein is stirred noodles. Keep this in mind and decide if you want to cook Chow Mein or Lo Mein.

Guyanese style of cooking is simply amazing. By changing the process on how you prepare your noodles provides a completely differently outcome in your meal. This is nice example of Karibbean cooking and I am proud to share. The Guyanese Style of cooking was able to take a recipe commonly eaten in Asia and was capable to recreate with a touch of their own creativity. Bringing Asian, Caribbean, and South American flavor all on one plate.

Ingredients
  

  • 2 Ibs Diced Chicken Breast was used here but you can use thighs as well
  • 1 bag Chowmein Noodles 
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Paprika
  • 1 tsp Black Pepper
  • 1 tbsp Green Seasoning
  • 1 tbsp Chief’s Chicken Seasoning
  • 1 tbsp Chief’s Chow Mein Seasoning
  • 1 tbsp Chief’s Chinese Seasoning
  • 1 tsp Chinese 5 spice Seasoning
  • 1 ½ tbsp Chief’s Chinese Sauce
  • 1 tbsp Cassava Cassareep Sauce 
  • ½ Onion Chopped
  • 1 Red Bell Pepper Sliced
  • 1 1 Yellow Bell Pepper Sliced
  • ¼ cup Corn 
  • ¼ Carrots Chopped
  • 2 Scallion Chopped
  • 1 tbsp Minced Garlic
  • 2 tbsp Wiri Wiri Pepper Diced 

Instructions
 

  • Boil your Chow Mein noodles.  
  • While that’s boiling prep your chicken by cleaning and then dicing it. 
  • Season your chicken with your garlic powder blend, chicken seasoning, Chow Mein seasoning, Chinese seasoning, Chinese sauce and Cassareep. 
  • In a pot add minced garlic and Wiri Wiri Pepper. Let it fry down.  
  • Next add in your chicken and let this cook. (About 5-6 Minutes)  
  • Then add in your chopped vegetables.  
    Vegetable Chow Mein
  • Take the bowl that you seasoned the chicken in and add a little bit of water. Add this to the pot. ( Let cook for another 4 Minutes) 
  • Mix well and then add in your boiled noodles. 
  • Season the noodles with Chinese 5 spice Chow Mein seasoning, a little more Cassareep  and a little more Chinese sauce. 
  • Mix and let cook down for 3 more minutes  
  • Serve & Enjoy
