Escovitch fish is a popular Jamaican recipe and is well known throughout the Caribbean. The flavor, the taste, and the process in creating our escovitch fish recipe is effortless. What is the meaning of Escovitch?
Escovitch is heavily seasoned fried fish with vinegar, onion, and carrots. Essentialy it is fish with rich seasoning and soaked with a tasty sauce. We include a lot more ingredients, but this is what I would call the foundation to an authentic Jamaican Escovitch recipe.

The next time you are in Jamaica, just ask the waiter for a fried fish. If they gave you a strange look, it’s because it is Jamaican slang. 😂 Every Yawdy would assume more than likely you are asking for an Authentic Jamaican ecovitch Fish.

Authentic Jamaican Escovitch Fish
Equipment
- Knives Set
- Utensil Set
Ingredients
- 4 whole Red Snapper
- ½ Lime or Lemon
- 1 tsp Salt
- 1 tsp Pepper
- Canola Oil or other neutral oil, for frying Supply enough oil to fry fish
- 2 Garlic Cloves
- 1 tbsp All Spice Berries
- 1 whole Onion
- ½ Large Carrots
- 1 Habanero Pepper
- 1 cup Vinegar
- ½ cup Water
- 1 tsp Sugar
Instructions
- Rinse fish with lemon or lime.
- Pat dry fish with paper towels, score, and season with salt and pepper or use your favorite seasoning.
- In a large skillet, heat oil over medium heat, you can add garlic to add some flavor to the oil- this is optional.
- Once the oil is hot, carefully add the fish and fry on both sides until cooked crispy .
- Remove fish and set aside.
Escovitch Sauce
- To a pot, add onion, carrots, habanero pepper, Vinegar, water, and allspice.
- Add salt to taste and sugar to balance the acidity of the vinegar.
- Once the vinegar is hot. Remove pot from heat and serve pickled veggies over your fish.

Notes
- You can sauté onion, carrot, and habanero pepper for a minute before adding vinegar and water
- You can also add bell pepper to your escovitch
- If you do not like the heat, you can leave out the habanera or remove the seeds
- Escovitch Sauce can be stored in a mason jar and can last weeks or months
- Whole allspice berries can have an unpleasant taste when bitten into, so you may remove them from your finishing dish before serving.
- You can use a julienne slicer to get long strips of carrots
