It is a bright and sunny morning in Sicily, Italy 🇮🇹 and Candace is craving something different to eat from her conventional Italian recipes. You see, Candace is a recent graduate from Cordon Bleu and she wanted to experiment her cooking skills. She falls in the category of what we call a foodie scientist. Growing up in Sicily she had many friends from Africa and always enjoyed their meals. Patricia is a childhood friend from Kenya and loved it whenever she cooked Kenyan Beef Pilau 🇰🇪.
Candace calls Patricia, and she recommended to check out Karibe. Karibe prioritized providing recipes that highlighted African and Caribbean Culture. After continuing her search Candace stumbled upon KaribeTV and wanted to take her shot at making curry chicken. Hesitant on moving forward, she called Patricia. Patricia assured her that Karibe’s easy curry chicken recipe is a must try.😊
Chicken Curry
Prior to recreating this recipe, she wanted to learn more. As she searched online, she was confused with the name of the recipe. 🤔From Candace’s understanding, it appears that it is based on where you are from. Jamaicans 🇯🇲 call it curry chicken as the meat is being seasoned by curry whereas in Guyana 🇬🇾 it is known as chicken curry as curry gravy is sautéed with vegetables such as onions, pepper and garlic prior to adding meat. In result, she also learned not to interfere with Jamaicans and Guyanese people about this recipe. 😂
History….
Candace continued her history lesson of curry chicken and was astonished by what she found. Curry means spiced meat or vegetable stew, and originates from India 🇮🇳. This young Italian woman from Italy went from looking to experiment with a recipe from another country to finding a recipe with a fusion of Kultures.
What To Eat?
Satisfied with what she had learned from her history of curry chicken, she called Patricia and asked, “what do I eat with this dish”? Patricia replied, “curry chicken and potatoes is a must, steamed rice, rice and peas, Jamaican Fried Dumplings, and for dessert Black Rum Fruit Cake”. Candace rushed to the kitchen with great tenacity and began making her easy curry chicken with Karibe.

Easy Curry Chicken Recipe
Equipment

Ingredients
- 2 Ibs Chicken
- 1 Lemon
- 1 tbsp Jerk Seasoning
- 1 tbsp Adobo Seasoning
- 2 tbsp Curry Powder
- 1 tsp All Purpose Seasoning
- 1 tsp Salt
- ½ Bell Pepper
- 1 Medium Onion Chopped
- 1 Medium Carrot Diced
- 1 Small Potato Diced
- 2 Sprig Fresh Thyme
- Fresh Rosemary
- Ginger
- 2 Cloves Garlic
- 1 Scotch Bonnet
- 5 Pimento Seeds
- Scallions
- 4 tbsp Cooking Oil
- 1 Can Coconut Milk
Instructions
- Wash the chicken in water with the lemon juice and drain any excess water from the chicken. Pat dry with a kitchen towel if necessary.
- Add 2 tbsp each of curry, jerk seasoning & adobo seasoning mix and rub well on the chicken pieces.
- Add in your peppers, onion & carrots as well as some thyme & rosemary and mix to incorporate everything.
- Allow it to marinate for 2 hours or more if you have time or at least 1hr
- After marinating, heat the oil in a pan, add in the curry powder and start the browning process.
- After browning, add in the chopped onions and garlic and sauté for about 5 minutes or until they soften.
- Add in the marinated chicken and sauté until the chicken is golden on all sides.
- Add the potatoes, chia ½ can coconut milk and stir in the seasonings.
- Bring it to a boil for 15 minutes and then lower the heat and let it simmer for another 15 minutes.
- Allow to cool and serve with your rice & peas.
