In the upcoming days it will be a fun-filled weekend in Bayonne with the honoring of Juneteenth and Patricia wanted to contribute to the festivities. Patricia is beautiful, super model –esque 💃🏽 from Kenyan 🇰🇪 and Tanzanian 🇹🇿 parents and she wanted to input her kulture into the festivities. She is known in the city as a great cook, so it is only right for this jovial holiday that she shows off her cooking skills. The challenge here is that Patricia never cooked for a large group, and she didn’t want to risk her reputation in preparing a meal that no one would enjoy.
Patricia immediately searched for easy African recipes, and she found Karibe’s Kenyan Beef Pilau on KaribeTV. Patricia was ecstatic, because she had been told that she knows how to make a good pilau. It helps that she is Kenyan because east African pilau is known as the best pilau dish.
East African Pilau
In east Africa, this beautiful recipe has many names, such as Swahili Pilau, East African Pilau and obviously Kenyan Pilau. What makes this hearty rice a hit is the mouthwatering mix of beef and potatoes on one plate. Patricia prints out the recipe sheet from Karibe and reviews the ingredients and instructions. She wanted to be certain not to make a mistake as this would be her first-time cooking for a large group. The ingredients provided great spices and of course that special touch of garlic.
As Patricia prepares her Swahili rice as her sister would call it, she begins to think of all the lovely meals that will complement her dish. Jamaican Oxtails and curry chicken were the first recipes that came to her mind. A nice blend of African and Caribbean Culture for Juneteenth. It would also be a great opportunity to educate the youth on the history, how to make a good Pilau, and why Karibe is a good reference on how to make the best pilau dish.
Swahili Pilau
She can start by answering the most common question. What is pilau? Pilau is a zesty rice cooked with a potato and your choice of meat such as beef 🥩 or chicken 🐔 in beef or chicken broth. Then she will go in more depth regarding the geographical regions. Such as pilau being commonly eaten in the Swahili coast countries like Kenya 🇰🇪, Tanzania 🇹🇿, Uganda 🇺🇬, and Mozambique 🇲🇿 to just name a few. A smile came to Patricia face as she was looking forward to sharing her dish.
Kenyan Beef Pilau
By the time it was Juneteenth, Patricia was capable of overcoming her fear of cooking for a large group. The rice turned out perfect and everyone enjoyed it along with the history lesson that was provided. 😊Being that this is her first-time cooking for a larger crowd, and it was a success, she thought, maybe Kenyans do make the best pilau dish. 🤔

Kenyan Beef Pilau 🇰🇪

Ingredients
Pilau Masala Ingredient
- ½ tsp Ground Cumin
- ½ tsp Black Peppercorn
- 1 tsp Ground Cardamom
- 1 tsp Black Pepper
- ½ tsp Cloves
Ingerdients
- 2 Cups Basmati Rice Rinsed and Drained
- ⅓ Cup Vegetable Oil
- 3 Large Onion Sliced
- 3 Cloves Garlic Minced
- 1 Chili Pepper Chopped
- Thumb Size Ginger Minced
- 1 Ib Beef Diced
- 1 tsp Pilau Masala
- ½ Can Tomatoes Chopped
- 2 Medium Potatoes Diced
- 2 Cups Water
- 1 Sprig Rosemary
- 1 Sprig Thyme
- Cilantro Chopped
- 1 tsp Salt
- 1 Cube Bouillon
- 2 Cups Basmati Rice
Instructions
- Toast all the spices and grind to a powder. The recipe makes extra spice that you can keep for future use.
- In a large pot over low-medium heat and add the oil and onions. Sauté for 10 minutes, until the onions are caramelized into a dark brown color.
- Add the minced garlic & ginger together with the chili and cook for 2 minutes to extract all the flavors.
- Add the beef and toss for 2 minutes, followed with the pilau masala spice prepared earlier and start browning the beef.
- Once beef is tender, add in the chopped tomatoes and let it cook for about 5 minutes or until it releases its juices and begins to thicken after which you can then stir in the potatoes.
- Add water, toss in the cilantro, rosemary, thyme, salt & bouillon cube and bring everything to simmer for about 5 minutes.
- Stir in the rice then cover and leave to cook on low heat for 25 minutes until the liquid has been absorbed.
- Serve and garnish as desired! Enjoy

Notes
- You can use any aromatics that contain all the pilau masala ingredients.
- You can use an aluminum foil to cover to trap in more steam.
- You can substitute canned tomatoes with fresh tomatoes.
- It’s also best to cook on low heat to avoid burns.
- Cooking time may vary depending on the type of rice you use.
